This is a favorite summer dish in our house and quite possibly an all-over favorite. It’s easy to make, but it’s a complex dish that combines different textures (crunchy vegetables, soft mango, grainy quinoa, crunchy peanuts) and tastes (savory, sweet, spicy, refreshing yogurt and mint).
